The diluted extract and the inositol assay medium are pipetted into the wells of a microtiter plate which is coated with \u003cem\u003eSaccharomyces cerevisiae\u003c\/em\u003e. The growth of \u003cem\u003eSaccharomyces cerevisiae\u003c\/em\u003e is dependent on the supply of inositol. Following the addition of inositol as a standard or as a compound of the sample, the bacteria grow until the inositol is consumed. \u003cem\u003eSaccharomyces cerevisiae\u003c\/em\u003e belongs to the yeast bacteria, and has an absolute growth requirement for the vitamin B6. Thus, this organism is ideal for quantification of pyridoxin in food and dietary supplements.
